Gourmet Caprese Salad with Balsamic Glaze and Pesto
  • 2 large heirloom tomatoes (or vine-ripened tomatoes)
  • 1 ball of fresh buffalo mozzarella (about 200g)
  • Fresh basil leaves (about 1/2 cup)
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon balsamic vinegar (aged, if possible)
  • Taste and adjust with sea salt and freshly ground black pepper.
  • 1 tablespoon pesto (optional, for drizzling)
  • Microgreens (optional for garnish)
  1. Prepare the Tomatoes and Mozzarella:
    • Slice the tomatoes into thick rounds, about 1/2-inch thick.
    • Slice the mozzarella into similar thicknesses, matching the tomato slices.
  2. Arrange the Salad:
    • On a large, flat serving plate, alternate the slices of tomato and mozzarella, overlapping slightly in a circular pattern.
    • Tuck fresh basil leaves between the slices of tomato and mozzarella, ensuring they’re evenly distributed.
  3. Dress the Salad:
    • Drizzle the extra virgin olive oil over the tomatoes and mozzarella.
    • Drizzle a few drops of aged balsamic vinegar over the salad to balance the sweetness and acidity.
    • Season with sea salt and freshly ground black pepper according to your taste.
  4. Finish with Garnishes:
    • Drizzle a thin line of pesto across the top (optional, for an herbaceous boost).
    • For an elegant touch, garnish with microgreens or additional whole basil leaves.
  5. Serve Immediately:
    • This salad is best served fresh at room temperature, allowing the natural flavors of the ingredients to shine.
  • Use seasonal tomatoes for the best flavor. Heirloom varieties are particularly sweet and juicy.
