**For the Sausage Mixture:** 

– 1 lb (450 g) lean ground turkey or chicken 

– 2 cloves garlic, minced 

– 1 small onion, finely chopped 

– 2 tbsp fresh parsley, chopped 

– 1 tbsp fresh sage, chopped 

– 1 tsp thyme leaves 

– 1 tsp smoked paprika 

– 1/2 tsp ground black pepper 

– 1/2 tsp sea salt 

– 1/4 tsp crushed red pepper flakes (optional, for a bit of heat) 

-2 tablespoons of olive oil or avocado oil

– 2 tbsp pure maple syrup 

– 1 tbsp Dijon mustard 

Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it with oil.

   While the sausages bake, whisk together the maple syrup and Dijon mustard in a small bowl. During the last 5 minutes of baking, brush the glaze over the sausages for a sweet-savory finish.
