Tofu Stir-Fry with Rice

Tofu Stir-Fry with Rice

For the Tofu:

  • One 14-ounce block of firm or extra-firm tofu, pressed and diced.
  • 2 tablespoons cornstarch
  • 1 tablespoon soy sauce
  • 1 tablespoon vegetable oil

For the Sauce:

  • 3 tablespoons soy sauce
  • 2 tablespoons hoisin sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon rice vinegar
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon grated ginger
  • 1 clove garlic, minced

For the Stir-Fry:

  • 1 tablespoon vegetable oil
  • 1 cup broccoli florets
  • 1 bell pepper, sliced
  • 1 carrot, julienned
  • ½ cup snap peas
  • 2 green onions, chopped
  • Sesame seeds, for garnish

For the Rice:

  • 2 cups cooked jasmine or brown rice

  1. Prepare the Tofu
    • Press the tofu for 10-15 minutes to eliminate excess moisture. Cut it into bite-sized cubes.
    • Toss the tofu cubes in soy sauce, then coat evenly with cornstarch.
    • Warm vegetable oil in a large skillet over medium-high heat. Add the tofu and cook for 5-7 minutes, turning occasionally, until golden and crispy. Remove from the skillet and set aside.
  2. Prepare the Sauce
    • In a small bowl, whisk together soy sauce, hoisin sauce, sesame oil, rice vinegar, honey (or maple syrup), ginger, and garlic. Set aside.
  3. Cook the Vegetables
    • In the same skillet, add vegetable oil. Sauté broccoli, bell peppers, carrots, and snap peas for 5-6 minutes until tender-crisp.
